Trapani, Sicily is the closest city in Italy to Africa. This specialty, which I learned how to make while training in Sicily, holds particular significance for me. Cuscus is steamed for two hours. You can taste the sweetness of the semolina. The bouillabaisse containing an ample amount of seafood is boiled for three hours, and then everything is grinded. It is full of collagen, and you can truly eat it all the way to the bone marrow.
